This wine is made from four parcels surrounding the Bejon's village of Saint Germain and total 80 ares. Annual production is around 3000 bottles.

The grapes macerate whole-cluster, saturated with carbonic gas in 50hl tanks for long periods of infusion: three weeks to three months depending on the desired tannic structure. Elevage then occurs in old barrels and, as of 2020, grès amphoras.
Each parcel ages roughly 50/50 in wood and grès but that may change with time and experience. Elevage lasts 12 months and the wines are released shortly after.
No SO2 is added at any point.
